Trikalinos Sardines

The Trikalinos journey began way back in 1856 when the Trikalinos brothers started Grey Mullet Avgotaraho production and trade in Etoliko, Greece.

Avgotaraho—or Bottarga as the Italians call it—are whole mullet roe sacks, dried and preserved in beeswax. I could go on and on about how delicious and healthy Trikalinos’ Avgotaraho is, but I’ve already done that. Here on this blog. Check it out!

But today, I’m here to tell you about another phenomenal ocean delicacy coming from Trikalinos.

Sardines.

Now, put out of your mind the canned mushy fish found on every grocery store shelf.

These premium Greek Sardela filets are marinated in the freshest Mediterranean ingredients and blend of extra virgin olive oil and sunflower oil. The delicate yet meaty, nutrient-rich, boneless and skinned sardines are packaged in glass jars without the use of preservatives, additives or any chemical processing.

If you are looking for a beverage to imbibe along side this oceanic delight, try the kick of ouzo, raki or vodka. For food pairings, Trikalinos sardines–with a perfect blend of bright acidity and rich olive oil flavor– will enhance any salad, pasta, pizza or a seafood sauce.

If you want to get more elaborate, Trikalinos offers up this mouth-watering recipe: Marinated Sardines with Avgotaraho with Espuma (espuma is the spanish term for “froth” or “foam”).

Here is the ingredient list:

8 thin slices of bottarga (avgotaraho)

juice of a small orange

juice of 1/4 of lemon

2 saffron threads

4 geranium flowers

8 tablespoons olive oil

3 marinated sardine fillets

Espuma is often brought into frothy existence by way of a siphon bottle, but you can also use a food processor. In this instance, to make the espuma, place all the ingredients EXCEPT the sardines and olive oil in a food processor and puree. Slowly and steadily drizzle the olive oil into the mixture while the processor is at a fast speed.

Spread this delicious foam onto a plate and lay the marinated fillets of sardine on top or beside with slices of cucumber to accompany.

Or, if you want to eat them straight up out of the jar, that would be completely acceptable and totally tasty, too.

The net weight is 200g with a drained weight of 125g. The shelf life is 6 months.
