Tunisian Vegetable Salad (or “red salad”)
We ate this colorful starter with the Mahjoub family from Les Moulins Mahjoub in Tunisia, and they were kind enough to share the recipe with us – simple and delicious!
INGREDIENTS (serves 4)
3 red beets
2 turnips
6-8 whole carrots
8oz. peas
1 jar Les Moulins Mahjoub Artichoke Hearts chopped
thinly cut onion to top
Les Moulins Mahjoub Extra Virgin Olive Oil for dressing
Tierra Vieja Organic Sherry Vinegar for dressing
Salt, pepper, and fresh cut parsley to top
PREPARATION
Peel and slice beets, turnips, and carrots how you prefer and then steam them until the level of cooked you desire. This is how the salad preserves all its flavor and the aroma of freshly-picked vegetables.
Once the vegetables are sufficiently chilled, you add chopped artichoke hearts, olive oil, salt, black pepper, sherry vinegar, parsley and thinly cut onion.
