Biscotti All’Amarena

The cherry biscuit is a traditional Neapolitan dessert born from the creativity of pastry chefs to avoid waste. Originally, in fact, it was prepared with leftover sponge cake, scraps of unused cakes and creams, mixed with cocoa and cherry syrup. This mixture was then enclosed in a shortcrust pastry case, cut into an oval shape and decorated with a typical glaze and two strips of black cherry.

Today the preparation maintains the original spirit, but uses fresh ingredients: it starts with the shortcrust pastry, which must be crumbly but resistant, to contain the soft and moist heart. The filling is made of crumbled sponge cake, black cherry syrup, cocoa and honey, for an even richer taste. The biscuit is finally glazed with sugar and egg white and baked in the oven until it obtains a slightly crunchy surface.

From a sensory point of view, the cherry biscuit is a perfect balance between sweetness and acidity. The crumbly pastry contrasts with the moist and aromatic filling, while the black cherry gives a pleasantly sour and fruity note, making it an intense and satisfying experience.
